2014 GG Cabernet Sauvignon
GG Cabernet Sauvignon was selectively harvested from a vineyard in the northern parts of the Margaret River Wine Region. The grapes were harvested straight into open top fermenters, where they sat on skins for 45 days. No mechanical crushing of the grapes occurred, so the colour and tannin were able to slowly integrate into the wine. Pressed straight into French Oak Puncheons, this wine matured for 20 months before being bottled without fining.
A rich Cabernet loaded with black olive, tobacco, sage, subtle eucalyptus and of course the black currants and ripe plums. The fine grained French Oak adds a caramel / cocoa sweetness to the palate.
This wine is designed for long term aging, however is drinking very well now.
